Highly Seasoned Opinions: Flavour Bistro Is Serving Up Pure Magic in Duvall

Duvall has some serious dining surprises up its sleeve, and we’re here for all of it. Enter Flavour Bistro, a Creole-Caribbean fusion restaurant that’s about to become your new obsession.

Finding this place is half the adventure. Flavour Bistro sits hidden at the back of an old building on Duvall’s Main Street, and you aren’t sure what to expect when you walk down the hall to the restaurant. But the ambiance is perfection; the dining room and bar area are unexpectedly pretty, feeling fancy without feeling stuffy.

As Sheetal puts it, walking into Flavour Bistro feels like stepping into a jazz lounge with Southern charm, where the walls hum with patterns and the staff greet you like an old friend. Whether you’re on a date, dining solo, or gathering with friends, the energy feels just right.

After our delicious meal at the Duvall Grange, we looked closer at Duvall’s dining options and booked a table here, even more convinced that this town has some great hidden gems.

Executive Chef Clive Gomez brings serious credentials, having worked at Seattle icons like Capital Grille, The Metropolitan Grill, and Ruth’s Chris Steakhouse. Growing up in Trinidad & Tobago exposed him to Chinese, East Indian, Creole, Spanish, French, and British influences, learning family recipes from his grandparents, and that multicultural foundation shines through in every dish.

Let’s talk about that Grilled Watermelon Salad. I adore restaurants that don’t just throw iceberg lettuce on a plate with some tomatoes and call it good, but I was dubious at first, having never had grilled watermelon.

The combination of flavors was surprising at first and then supremely delicious. Although admittedly, I’d eat an old shoe if it had balsamic glaze on it, this was a far cry from an old shoe and maybe my favorite part of the meal.

Sheetal sees it as pure genius: “Flavour Bistro doesn’t just serve salad—it reinvents it. The Grilled Watermelon Salad is a masterclass in contrast: smoky-sweet watermelon meets tangy feta, with roasted red pepper adding depth and chiffonade mint lifting the whole dish into refreshing territory. Micro herbs and candied pecans bring texture and elegance, while a balsamic glaze ties it all together like a culinary bow. It’s summer on a plate, with sophistication.”

Creole Chicken and Gnocchi

We considered the sous vide short ribs but decided to lean into the Creole vibe of the place and ordered the Creole Chicken and Gnocchi instead. It was so good and such a generous portion that we each brought a container home, even though we split the plate. My husband enjoyed it too the next day! The brightness of the cherry tomatoes offset the cream sauce perfectly, making for a rich base for the perfectly cooked gnocchi. It’s definitely one of my personal favorites so far in this series.

Sheetal describes it as “a warm hug with attitude. The Creole Chicken and Gnocchi pairs tender, spice-rubbed chicken with pillowy potato gnocchi, all bathed in a creamy garlic sauce that’s rich without being heavy. Cherry tomatoes burst with brightness, spinach adds a touch of earthiness, and the whole thing feels like a Southern Sunday dinner that took a vacation in the Caribbean and came back with stories.” (Her food descriptions are so much better than mine!)

The Fig Flatbread was another winner. Again, a very generous portion of the salty prosciutto was a great foil to the sweet fig jam and the creamy goat cheese. Sheetal and I agreed that the fig chunks were a bit large, but otherwise it was crunchy, sweet, salty and creamy. A mouth party, or as Sheetal put it, “a revelation.”

The drinks deserve a shout-out, too. The Duvall Drop featuring local Duvall Distillery vodka with limoncello and Sweet 58 liqueur proves that you cannot go wrong with a lemon cocktail on a warm summer day. No notes, just good.

And that mysterious “Sheetal’s Absinthe”? Our wonderful waiter, whose name we embarrassingly didn’t catch, created this unnamed cocktail on the fly based on what Sheetal likes. She found it bold, sweet, and herbaceous with a modern twist that felt perfectly in line with the restaurant’s unapologetically unique vibe.

What really struck us, based on what we read about Chef Gomez on his LinkedIn page, is his philosophy of working with local Washington farmers to showcase natural flavors, combined with his passion for mentoring younger chefs.

You can taste that dedication to quality and community in every bite. This isn’t just a restaurant; it’s a celebration of bold flavors, vibrant culture, and the kind of hospitality that makes you feel like family.

Flavour Bistro is open Wednesday through Saturday from 5-9 for dinner, with Sunday brunch service from 10-2. Trust us when we say this place is worth the visit, and once you go, you’ll be planning your next trip before you’ve even finished your meal.
