SUMMARY:Carnation Farms Floral Centerpiece Workshop
DESCRIPTION:Floral Centerpiece Workshop\n\n\nMarch 21 @ 1:00 pm – 4:00 pm \n\nJoin Carnation Farms for a festive spring floral workshop with award-winning florist Cassandra Solmonsen! Participants will delve into the art of floral design using locally sourced blooms\, ensuring a sustainable and vibrant creation. The workshop will cover essential lessons in color theory and design principles\, equipping you with the knowledge to create your own stunning arrangements–and a floral centerpiece to take home!\n\n\nAll necessary supplies\, including floral shears\, vessels\, and armatures\, will be provided. \nThis afternoon of floral creativity and community is perfect for anyone who loves flowers\, enjoys connecting with nature\, or wants to learn a new creative skill. \nAbout the Instructor: Cassandra Solmonsen spent her childhood running barefoot through the forest\, much to her parents’ chagrin\, fascinated by the deep greens of the moss\, the bright white of the trillium\, and the jewel tones of the salmon berries. This love for nature\, especially locally grown PNW flowers and greenery\, has only grown in the three decades since. \nHer work focused on embracing the natural beauty of blooms and designing organic pieces that represent this wonderful place we get to call home.

SUMMARY:Carnation Farms- Butchery Workshop: How to Cut & Cook Lamb
DESCRIPTION:Butchery Workshop: How to Cut & Cook Lamb\n\n\nApril 4 @ 4:00 pm – 7:00 pm \n\n\n\nJoin us this April for a hands-on workshop that brings together whole-animal butchery\, bold flavors\, and plenty of time around the grill! \nIn this immersive class\, you’ll learn how to break down a whole lamb and turn those cuts into crowd-pleasing lamb kabobs—or kofta/kefta—while building confidence working with lamb from start to finish. Led by our on-site butcher\, Thomas Coss\, the workshop covers whole lamb breakdown\, seasoning and shaping ground lamb for kabobs or kofta\, and techniques that mirror sausage-making—without the need for casings. It’s a practical\, approachable way to understand flavor balance\, texture\, and how different cuts shine in different preparations. \nWe’ll finish the day by firing up the grill and enjoying what we’ve made together\, served with house made tzatziki and yellow rice. Rooted in seasonality and Carnation Farms’ regenerative practices\, this workshop is perfect for curious cooks\, lamb lovers\, and anyone looking to deepen their connection to the land\, the animal\, and the meal we share at the table. If you’ve purchased a lamb share or are considering it\, this class is a great opportunity to learn how to make the most of your share! \nAbout our Butcher: Instructor Thomas Coss is a butcher and chef with over a decade of experience working with local farms and ranches in the PNW. He specializes in nose-to-tail butchery with a focus on ethical sourcing. His expertise has been a welcome addition to our culinary team. You most likely have tasted his work for yourself in our Farm-Cured Beef Jerky\, Farm Meatballs\, Smashburgers\, and more! \nAbout our Lamb: At Carnation Farms\, our lamb is raised right here using regenerative agricultural practices that prioritize soil health\, animal welfare\, and the long-term vitality of our land. Through rotational grazing and careful stewardship\, our sheep help restore the ecosystem while producing meat that is deeply flavorful and responsibly raised.

SUMMARY:Sourdough Workshop with Evan Sponsler\, Baker at Carnation Farms
DESCRIPTION:Saturday\, Apr 18 from 1 pm to 4 pm PDT\n\n\nCome get hands-on experience with our expert baker and leave with all the tricks of the trade!\n\n\n\nLove Carnation Farms sourdough? Have you tried making it at home but couldn’t quite get the hang of it? This is your chance to finally learn how to make and maintain a starter\, mix a loaf of bread by hand\, and bake the perfect loaf at home. You will learn about baker’s ratios\, how to adjust recipes\, and how time and temperature play a role in the outcome of your bake to help you make the perfect loaf\, every time! \nStudents will leave the class with their own sourdough starter\, an unbaked loaf to bake at home\, a baked demi-loaf to enjoy later in the week\, and an instructional pamphlet and recipes to keep them inspired. \nThe class will provide light beverages and snacks\, including cheese\, charcuterie\, and jams to enjoy with some freshly baked bread. This class is perfect for beginners or folks who have made a couple of loaves of bread already but want to get a better understanding of the process. \nAbout the Baker: Evan’s love for food began in childhood in St. Louis\, Missouri\, where he learned to cook from his Filipino mom and to bake with his grandma. He worked in kitchens in between coursework for a Psychology degree\, but ultimately\, he fell in love with the grain. He came to Carnation Farms via the Herbfarm and DERU Market. He strives to ensure his baking practices match our regenerative mission and that you can taste the difference in their loaves.
