BIG Changes for Glass & Bottle Bistro as New owners take over; future expansion, kids now allowed

Things are changing at Glass & Bottle Bistro on Snoqualmie Ridge. As of August 1st, the former wine bar had new owners take the helm –  and with this 5th change in ownership comes big changes.

The new ownership team is hosting a restaurant-warming event to showcase new and improved menu on Wednesday, August 24th and invite the community to stop by, sample some food and just hang out for a bit.

After a group of restauranteurs from Good Libations LLC purchased and re-opened Glass & Bottle Bistro, their first big change was turning the formerly 21+ wine bar into an upscale American bistro. That means kids are now allowed inside the restaurant portion of the establishment, which the owners say will be offering “the first true fine dining destination on the south side of the Snoqualmie Ridge.”

The owner team of Jeni Herberger, Adam Fry-Pierce, and Tawni Christiansen say they recognized a demand for an elevated culinary experience when they previously visited the Snoqualmie Valley area.

“Snoqualmie has grown over 350% since 2000, and businesses like T-Mobile and Space Labs are moving out here because, quite simply, this is a desirable area. The local community has grown to be quite sophisticated in what they eat and drink, and they’re hungry for a destination restaurant. That’s what we’re going to deliver,” said Fry-Pierce. “There are some great eateries up here, no doubt, but in order to experience a 5-star meal, one must travel quite a ways west. Not anymore. ‘

At the August 24th restaurant-warming event, Glass & Bottle will be sampling its new and improved menu, as well as making some exciting announcements about what’s ahead.  The event runs from 6PM – 9PM. The kitchen will be closed for orders – but there will be plenty of menu samples available. The new cocktail menu will also be revealed, with drinks available for purchase.

One thing the small space has been limited by over the years is the size of the kitchen. BUT it appears that may also be changing. Adam said the new menu is just the beginning for Glass & Bottle Bistro.  They also have big future plans to expand the kitchen, as well as redesign the dining space, to allow the restaurant to offer a “more robust and world-class culinary experience.”

Owner Jeni Herberger is spearheading the brand transformation in the coming months. “By the time we’re finished unrolling improvements, our patrons can expect a delightful experience, top-to-bottom,” said Herberger. “Changes will unroll over time. I encourage all curious minds to swing by and say hello, and be part of our story as we create the destination restaurant of the Cascades.”

In addition her ownership role, Christiansen will also be the General Manager. Tawni has lots of experience managing family style restaurants across the Seattle area, and is excited to deliver a premium experience to the local community.

The 47-seat, 1200 square-foot Glass & Bottle Bistro offers classic and modern American cuisine (takeout, too), as well as a full-service bar. They’re open Monday through Wednesday, 4PM to 10PM, and Thursday through Saturday, 4PM to 11PM.

  • Hi There! I really hope my dining experience on Sat 8/20 isn’t indicative of their hopes and aspirations. I was not thrilled with any of the dishes we ordered and I had really high hopes after all the push on Facebook. The dishes were bland with low quality ingredients (definitely not fine dining/cuisine quality), the bottle of beer tasted expired, and the drink glass looked cloudy/not clean. We do think the atmosphere and ambience is appealing – so the potential is there – I’ll give it another try once the overhaul is completed, but my business was definitely not earned and I would recommend that focus should be on keeping customers wanting to come back. Good luck to the new owners!
