Premier Irish Week for Snoqualmie’s Saints & Scholars Pub

The last time we spoke to Adrian Webb and Amanda Stoffel of Saints and Scholars in Snoqualmie, they were working through some pandemic-related delays and hoping for a Grand Opening in the summer of 2022.

The couple had a soft opening of their Irish Pub, Saints & Scholars, in October – the culmination of 2.5 years of pandemic-related delays, not the least of which were shipping delays, rail strikes, permit delays and construction work.

Adrian and Amanda are now preparing for their first Irish Week with a full calendar of events.

  • Tuesday, March 14th, is family night. The event will include a face painter, a balloon twister, a magician and a caricaturist. There will be candies for the kids and the chance to win some prizes. Regular business hours are from 4 to 10 PM, and most entertainment will start around 5 PM.
  • Wednesday, March 15th, is Irish Trivia night, starting at 7:30 PM. All teams that pre-register by booking a table through Open Table will get a round of drinks covered by their sponsor, the Adrian Webb Mortgage Advisor Team.  
  • Thursday, March 16th, they will have March Madness and Karaoke starting at 8 PM.
  • Friday, March 17th, St. Patrick’s Day, will be a fun-filled day of action and entertainment with Seattle Irish Dancers, King County Firefighters’ Pipe & Drums, local artist Nick Mardon and ending with DJ Sean The Shaman. 
  • Saturday, March 18th, will feature an Irish Brunch, including the Full Irish, Macadamia Nut Pancakes, Bananas Foster Stuffed French Toast, yum! Local Artist Dane Stokinger at 5 PM and the headline event Dueling Pianos Staring at 8 PM.
  • The Week will culminate on Sunday, March 19th, with a special tribute to Adrian’s Dad, who recently passed away. The celebration of life will start at 5 PM with “That Irish Guy” solo artist. There will be a toast of Smithwick’s at 6 PM, sponsored by Adrian’s business.

Saints & Scholars will also be featured on King 5’s Evening Magazine on March 16th. The show will be filmed in the Pub, featuring some of their signature menu items and specialty cocktails. Evening magazine will be helping to promote the weekend of events.

Adrian credits his wife, Amanda, for her persistence in clearing the delays during construction and choosing all items on the menu with the help of a consulting group. Her attention to detail was evident when she scheduled four tastings of menu items, followed by several revisions. When you come to the space, it is apparent that Amanda and Adrian want to do more than build a pub; they are on a mission to honor their Irish family.  

Saints & Scholars locally sources ingredients as much as possible. Their main meat provider gets all their steaks and burgers from Royal Ranch, a sustainable local producer. The goal was to bring a culinary experience to the community with all items made in-house from scratch.

A Type 1 Hood, along with all new modern kitchen equipment, was installed, which gives Head Chef Brad White the tools to produce delicious and healthy meals. New items are added on a seasonal basis, and a Happy Hour will be introduced the Week after St Patrick’s day. Stoffel created the specialty cocktails and all the holiday spirits.

I have been lucky enough to dine with friends once at their soft opening in October and again last month. We thoroughly enjoyed their Sausage Rolls, Mac & Cheese, Spicy Asian Crispy Chicken Wings, and Shepherd’s Pie, seasoned with spices they toast and grind in-house, S&S Burger, Irish Whiskey, and those specialty cocktails. We all look forward to returning for more.

More includes a 10-day brined corned beef sandwich,  a massive half-pound beer battered fish filet dinner, a fried chicken sandwich that can be gluten-free, and a brunch featuring corned beef hash, fried chicken benedict, and soon a full Irish and bananas foster stuffed French toast. The soon-to-be happy hour will include items not on the regular menu, like corned beef egg rolls, crispy lobster tail, and steak bites; yum!

The restaurant vibe is warm and friendly yet still energetic. Amanda says, “we really want this pub to be where people feel comfortable enjoying a delicious yet casual meal, excited to share in their celebrations or even come in for a business meeting.”

Adrian and Amanda are eternally grateful for their amazing community, which has given them an outpouring of support during their recent challenges – the death of Adrian’s Dad and Adrian’s work, which requires him to spend a lot of time outside of the Pub.  

Adrian says, “We want the community to know we will always strive to create the best experience possible; we are far from perfect; however, we are constantly looking for ways to improve. We want to provide as much value as possible to this amazing community despite rising food and labor costs.
